The copyright information is located on a page, in the includes folder:

b11-copyright.htm

• open the includes folder
• open the b11-copyright.htm page
• edit the text
• save

All web pages in your site, using the included page (all pages are set up this way by default) will be updated with your new information.

If you have removed the included copyright element from some of your pages, you can open a page with this element intact, copy and paste, or edit the information by hand.
